It’s soup season!

Let me say it, I LOVE SOUP! Unfortunately my husband doesn’t…😫 So, I frequently make myself soup for lunch. Most of the time I throw it together before work and have my lunches for at least a few days. Today I made Roasted Tomato Bisque. It sounds fancy but it’s really simple and goes together quickly!

So here’s the recipe:

Roasted Tomato Bisque:

1 small sweet onion diced
2 carrots diced or 6-8 baby carrots diced

2 cloves of garlic minced

2 tablespoons olive oil

1 cup vegetable stock

1 can fire roasted tomatoes

1 tablespoon tomato paste

2 teaspoons sugar (I use coconut sugar)

Salt and pepper to taste

Red pepper flakes (optional)

1 cup evaporated milk

Directions:

1. Sauté carrots and onions in oil til tender

2. Add garlic sauté til fragrant

3. Add tomatoes, tomato paste, broth, salt, pepper, pepper flakes and sugar let simmer.

4. Add evaporated milk

5. Purée with an immersion blender until smooth.

It can be eaten plain or garnished with cheese, sour cream, avocado, croutons or whatever else your little heart desires 😉
